Recipe of the Month: Vegetarian Nachos with Clarks Surf Chips




Vegetarian Nachos
Prep time: 15 mins Cooking time: 15 mins
Yield: four portions

Ingredients
1 pkt Clarks Surf Chips
1 tin red kidney beans or refried beans
1/2 finely chopped green capsicum
1/2 finely chopped red onion
1 green chilli diced finely - seeds removed
1 teaspoon spanish paprika
2 teaspoons ground cumin
Salt, pepper, chilli and garlic powder to taste
1 tin of tomatoes or 5 diced tomatoes
3/4 cup grated cheese

250ml sour cream
sliced jalapeno chillis

Preparation
Spread corn chips over a tray and layer ingredients evenly, beginning and ending with a layer of cheese before topping with small spoonfuls of cream cheese and sliced jalapenos if desired. Bake in moderate oven until cheese melts and sour cream is softened. Check regularly to ensure topping and chips are browning evenly. You may need to turn the baking tray during the process.
